1、银鳕鱼味淡,无腥味,还容易吸味,因此不可加太多酒或酱油来腌制,否则鳕鱼会过咸。#Yu8Y3LE|
2、通常售卖的银鳕鱼都是急冻的,要提前用淡盐水解冻,洗净拭干水再用来烹调。

3、腌制银鳕鱼时,不可加入清水,否则鳕鱼蒸熟后,会大量出水而冲淡味道。@1\$rl[E-ws4pvu
4、鳕鱼肉质细嫩,包上锡纸后,下锅清蒸7~8分钟就熟了,鳕鱼不能蒸久,否则鱼肉会过老。
