牛肉,最好买到小牛肉,因为嫩,好吃。切片备好:

蘑菇用清水洗干净,切成薄片。牛肉我用的是小牛肉。牛肉切薄片,用水淀粉还有一点料酒腌渍一会(小牛肉本身十分细嫩,就不需要嫩肉粉的帮助了,不然就会暴殄天物了),泡嫩油,把牛肉滑成7成熟时取出沥干。锅里留底油烧热,放入葱丝,姜片,蒜片还有红辣椒爆香,加入少量黑胡椒,紧接着放进菌菇片爆炒。稍微炒一下就立即加入牛肉,放入盐,蚝油,香醋,再烹入少量清汤,烧开,加味精或者鸡精,加水淀粉勾芡,打明油即可出锅。 &kVGJ#Wn5]1\;Ra
