1.偶买的鱼已经去头去骨刺,直接切片,放料酒,姜片,葱节,盐 码味10分钟. 然后取出鱼片,上干生粉,适当多上些.bV&q4|1_}"j'C

2.锅里下2两菜油,7成热,把鱼片炸到断生,捞出,不能炸太过,不能有焦黄色.鱼片每次不要放过多.

3.锅里下油,烧到5成热,加姜,蒜,葱,豆豉,豆瓣,泡辣椒慢慢炸出红亮色,加高汤(没有就用水),下葱,胡椒粉盐调味,此时可根据口味,加如蘑菇等. 烧开.
